Tenute Mannino di Plachi is a traditional yet dynamic company that reflects, within its production philosophy, a great entrepreneurial spirit, and the ability to look into the future, investing in a skilful combination of craftsmanship and innovation. The ability to adapt and the desire to overcome one’s limits are the keywords for building a winemaking model open to the new frontiers of technology. In the pursuit of this goal, the company has embraced – from as early as 1998 – a path of constant productive development, respect for the work done in the vineyard and investment in all the different elements of the supply chain. In the cellar, a team of experts led by oenologist Giuseppe Gangemi has focused decisively and resolutely on the use of thermo-conditioned tanks for white and sparkling winemaking, cutting-edge equipment which minimizes contact with oxygen, and, finally, the use of chillers to accelerate or delay fermentation without the use of chemical additives. Vinification is carried out in accordance to four different protocols: white and red but also rosé, and a classic method sparkling wine produced in less than 1000 bottles. Finally, the final stage of production concerns the aging operations in steel for white wines and, for our red Crus, in French oak tonneaux.
